It's a restaurant speakeasy type. Of course, delicious products, quality wine, and great service.
I am used to go to this kind of place. Do I think it was incredible for this kind of restaurant? Some of the food items are really worth the visit. I like the concept. I liked this atmosphere.
They work hard to make you happy. I highly recommend it.
Thru a market in Hell's Kitchen, behind aisles of groceries lies the beautiful hidden immaculate dining room. When the restaurant closed briefly last year, they lost all of their 3 coveted stars and will be judged as a new establishment later this year with their two new chefs. In my humble opinion I would be shocked if they didn't gain back at least 2 stars. An impeccably executed meal from start to finish. I dined here twice ages ago when it was still in Brooklyn and BYOB — the format has changed but Chef's Table is definitely still a well worthy destination for a special experience.
The overall experience was very good. Had a hard time finding it, so if you go, it’s tucked in the back corner of their grocery store. Sat at the counter which I always enjoy because I like watching the chefs in action. But be prepared, this is a 3 hour venture with 13 courses. I promise you that and you will not walk away hungry. The detail and flavor profiles I thought were excellent. The only criticism is the size of each portion. I would prefer smaller portions so that I could enjoy 13 courses. I almost couldn’t finish and my wife was completely full after 8 courses. And I’m not a fan of more than 1 dessert. This experience had 4. Too much. It goes down as my #1 most expensive meal which price doesn’t move my decisions especially when everything is pricey today. But be prepared because it’s about $1k per person. But most important the food was excellent.
This restaurant was once awarded three Michelin stars for ten consecutive years and is also a representative of New York's fusion cuisine style. They primarily blend Japanese and French culinary elements to create an out-of-the-box and unforgettable dining experience.
In 2023, due to disputes between the owner and the former chef, resulting in the departure of the ex-chef, they were removed from the Michelin three-star list, sparking considerable attention and comments from diners. From my recent dining experience at the restaurant, their removal from the Michelin three-star list does not imply that they no longer meet the standards of a Michelin three-star restaurant. Rather, it's because they are now operating as a "new restaurant" after reorganizing their chef team, which should be in a "grade pending" status. Personally, I feel that in the 2024 Michelin ratings, they have a very high chance of regaining Michelin star status, even if not immediately returning to three stars.
Overall, this restaurant is highly suitable for diners interested in tasting fusion cuisine that blends elements from around the world, as well as for chefs in the food industry seeking new ideas. Additionally, the restaurant's service is excellent, even among fine dining establishments, as the staff seamlessly combine professionalism and friendliness. The dining environment in the restaurant is also excellent. Whether enjoying food preparation at the bar or having a more intimate dining experience at a table, both options provide a great experience.
Here are some highlights of the restaurant's strengths:
1. The seafood dishes at the restaurant are outstanding, with subtle seasoning that highlights the natural flavors of the seafood. Some small garnishes add a finishing touch to the dishes, akin to the layers of fragrance in perfume, leaving a memorable impression.
2. The restaurant operates very efficiently, with each dish transitioning smoothly, akin to a symphony, where one movement ends and the next begins at the appropriate time.
3. The service at the restaurant is excellent, with the staff knowledgeable about the dishes and beverages, smoothly and warmly introducing each dish, leaving a special impression on the diners.
4. The desserts at the restaurant are delicious, whether it's pastries, ice cream, or fruit, all displaying creativity.
5. The non-alcoholic drinks are excellent, providing a great option for those who do not enjoy alcohol.
Furthermore, the restaurant may have some areas for improvement:
1. The meat dishes at the restaurant seem to be less impressive than the seafood dishes, especially the wagyu beef dish, which is not cooked to perfection, failing to highlight the characteristics of wagyu beef.
2. The sea urchin and waffle dish show great creativity in combining Asian and European ingredients. However, the waffle seems too soft and cannot effectively hold the uni; I almost dropped the uni while eating. Moreover, both the waffle and uni have a heavy sweet taste and soft texture, lacking impact. Perhaps replacing them with different bread and uni combinations would be better.
3. While each seafood dish has excellent flavor, the seasoning and presentation seem somewhat repetitive, giving a sense of redundancy. Perhaps experimenting with more diverse elements and variations would be beneficial.
4. The restaurant does not offer bread, a common feature in many European restaurants. Although bread may not be particularly expensive, I believe it is an essential part of French and many European restaurant cuisines. With bread, diners can dip it into the soup, creating a special dining experience and balancing the flavors of some heavier dishes.
In conclusion, it was a very enjoyable dining experience. I hope the restaurant regains its Michelin star status in 2024 and continues to explore the path of fusion cuisine, breaking through the limitations of traditional rating systems and textbooks, and continuing to be a representative of New York cuisine and a unique restaurant in the world.
King crab tart was so delicious perfect balance with the little pickle ,Miyazaki wagyu tart just melted so much flavors from one bite love the nori taste !
Every course are perfectly executed the balance of taste just top notch, I love the scallop dish perfectly cook with the Vin sauce crispy potatoes so delicious! langoustine With koshihikari rice , this rice I can have 10 bowl of it !
We started with champagne then white burgundy and finished with a glass Italian red
Each course pair so well with the drinks.
Service are impeccable!
For the quality of the ingredients they used it’s totally worth every dollar you spent !

An impeccable meal served and cooked by one of the world’s best teams. Every single item was pristine and immaculate in flavour and execution.
We had sky high expectations, and the whole experience was a big win!
Chef Max Natmessnig and chef Marco Prins are extremely talented. They serve exclusively quality ingredients as langoustines from Norway and Wagyu beef from Japan.
Our favorites were the sea urchin over the crispy waffle with white truffles from Alba Italy, as well the grilled scallop with vin Jaune sauce and caviar.
Desserts are very flavorful and perfectly balanced. Service is very attentive and warm.

Travelling from South-East Asia to New York City, I was eager to experience the renowned culinary scene, and The Chef's Table at Brooklyn Fare was on top of my list.
The ambiance struck a perfect balance between sophistication and warmth, welcoming me the moment I walked through the doors.
Chefs Max and Marko, along with their team, were the evening's stars, crafting a menu that dazzled my taste buds and was deeply impressive. Each dish was a celebration of flavors, artfully presented and executed with precision.
The beverage pairings were equally impressive, enhancing the meal with a thoughtful selection of wines. Moreover, the attentive and friendly staff made the evening all the more enjoyable.
This dining experience was undoubtedly a highlight of my trip. I'm incredibly glad I didn't miss out on this exquisite dinner. A heartfelt thank you to the entire team for making my (culinary) journey so memorable.
